Shellfish
As the name implies, shellfish are animals contained in
a shell. They live underwater, but do not have fins. They are a delight
for seafood lovers because their meat is tender and the muscles are
solved.
The two types of shellfish are mollusks and crustaceans. Clams, scallops,
and oysters are different types of mollusks. Crustaceans include crabs,
shrimp and lobsters.
After you purchase shellfish they should be refrigerated immediately.
They are highly perishable. If you need to store them for a long time,
flash freeze them at the height of their freshness.
